Salade niçoise (French pronunciation: [salad niswaz]; Occitan: salada niçarda, pronounced [saˈlaðo niˈsaɾðo], or salada nissarda in the Niçard dialect) is a salad that originated in the French city of Nice. It is traditionally made of tomatoes, hard-boiled eggs, Niçoise olives and anchovies or tuna, dressed with olive oil or, in some historical versions, a vinaigrette. It has been popular worldwide since the early 20th century, and has been prepared and discussed by many chefs. Delia Smith called it "one of the best combinations of salad ingredients ever invented" and Gordon Ramsay said that "it must be the finest summer salad of all".

Salade niçoise can be served either as a composed salad or as a tossed salad. Freshly cooked or canned tuna may be added. For decades, traditionalists and innovators have disagreed over which ingredients should be included; traditionalists exclude cooked vegetables. The salad may include raw red peppers, shallots, artichoke hearts and other seasonal raw vegetables. Raw green beans harvested in the spring, when they are still young and crisp, may be included. Parmesan (Italian: Parmigiano Reggiano, pronounced [parmiˈdʒaːno redˈdʒaːno]) is an Italian hard, granular cheese produced from cow's milk and aged at least 12 months. It is a grana-type cheese, along with Grana Padano, the historic Granone Lodigiano [it], and others.

The term Parmesan may refer to either Parmigiano Reggiano or, when outside the European Union and Lisbon Agreement countries, a locally produced imitation. (Full article...)

Chinese cuisine comprises cuisines originating from China, as well as from Chinese people from other parts of the world. Because of the Chinese diaspora and the historical power of the country, Chinese cuisine has profoundly influenced other cuisines in Asia and beyond, with modifications made to cater to local palates. The world's earliest eating establishments recognizable as restaurants in the modern sense first emerged in the Song dynasty China during the 11th and 12th centuries. Street food became an integral aspect of Chinese food culture in the 7th century during the Tang dynasty, and the street food culture of much of Southeast Asia was established by workers imported from China during the late 19th century. Vinegar (from Old French vyn egre 'sour wine') is an odorous aqueous solution of diluted acetic acid and trace compounds that may include flavorings or naturally occurring organic compounds. Vinegar typically contains from 4% to 18% acetic acid by volume.

Usually, the acetic acid is produced by a double fermentation—converting simple sugars to ethanol using yeast, and then converting ethanol to acetic acid using acetic acid bacteria. Many types of vinegar are made, depending on source materials. (Full article...)

Bruschetta (/bruˈskɛtə, -ˈʃɛtə/ broo-SKET-ə, -⁠SHET-ə, Italian: [bɾuˈsketta] ^ⓘ) is an Italian appetizer (antipasto) consisting of grilled bread topped with garlic, olive oil, and salt. Isabella Mary Beeton (née Mayson; 14 March 1836 – 6 February 1865), known as Mrs Beeton, was an English journalist, editor and writer. Her name is particularly associated with her first book, the 1861 work Mrs Beeton's Book of Household Management. She was born in London and, after schooling in Islington, north London, and Heidelberg, Germany, she married Samuel Orchart Beeton, an ambitious publisher and magazine editor.

In 1857, less than a year after the wedding, Beeton began writing for one of her husband's publications, The Englishwoman's Domestic Magazine. She translated French fiction and wrote the cookery column, though all the recipes were plagiarised from other works or sent in by the magazine's readers. In 1859 the Beetons launched a series of 48-page monthly supplements to The Englishwoman's Domestic Magazine; the 24 instalments were published in one volume as Mrs Beeton's Book of Household Management in October 1861, which sold 60,000 copies in the first year. Beeton was working on an abridged version of her book, which was to be titled The Dictionary of Every-Day Cookery, when she died of puerperal fever in February 1865 at the age of 28. She gave birth to four children, two of whom died in infancy, and had several miscarriages. Two of her biographers, Nancy Spain and Kathryn Hughes, posit the theory that Samuel had unknowingly contracted syphilis in a premarital liaison with a prostitute, and had unwittingly passed the disease on to his wife. After graduating from Oxford, Lawson worked as a book reviewer and restaurant critic, later becoming the deputy literary editor of The Sunday Times in 1986. She then wrote for a number of newspapers and magazines as a freelance journalist. In 1998, her first cookery book, How to Eat, was published and sold 300,000 copies, becoming a best-seller.
